Wilted Dandelion Green Salad

Quick, simple and absolutely bursting with the perfect blend of flavors, bitter greens are tossed with honeyed walnuts, earthy goat cheese and sweet blueberries for a splendid salad which perfectly complements spring and summer grilling.

  • ½ cup chopped walnuts
  • 1 Tbsp olive oil
  • 2 Tbsp Nate’s 100% Pure Honey
  • ½ tsp salt
  • ⅛ tsp cayenne pepper
  • 1 bunch fresh dandelion greens (about 4 cups)
  • ½ cup blueberries
  • ½ cup goat cheese crumbles

In a large skillet, lightly saute the walnuts in the olive oil until they begin to brown. Add the honey, salt and cayenne pepper. Stir until the walnuts are just coated. Add the greens, and stir several times to slightly wilt. Spoon the greens onto two salad plates or bowls. Top with the blueberries and goat cheese.
