Ingredients
  • ½ cup chopped walnuts
  • 1 Tbsp olive oil

  • 1 bunch fresh dandelion greens (about 4 cups)
  • ½ cup blueberries
  • ½ cup goat cheese crumbles

Directions

In a large skillet, lightly saute the walnuts in the olive oil until they begin to brown. Add the honey, salt and cayenne pepper. Stir until the walnuts are just coated. Add the greens, and stir several times to slightly wilt. Spoon the greens onto two salad plates or bowls. Top with the blueberries and goat cheese.
