Thai-Inspired Peanut Honey Bites

These Thai-inspired peanut honey bites combine flavors from some favorite Thai dishes, which gives these energy bites some unexpected and pleasant surprises.

Ingredients
  • 1/2 cup toasted, unsweetened coconut
  • 1/2 cup peanuts
  • 6 oz dried peaches*
  • 2/3 cup Nature Nate’s pure honey
  • 2/3 cup creamy natural peanut butter
  • 2 cups crisp rice cereal
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/8 tsp cayenne powder, optional

Directions

Process coconut, peanuts and peaches until very well chopped. Combine in a large bowl with remaining ingredients. Mix by hand and roll into bite-sized pieces. Store in a cool dry place.

These bites will last for two-three weeks in the refrigerator. Makes about 2 dozen.

*You can also use golden raisins or apricots, but peaches are preferred!
