Shortbread Tea Cakes

Total Time: 35 Minutes, plus overnight to chill
Ingredients
- 1 cup butter
- 3 Tbsp Nate’s 100% Pure Honey
- 1½ tsp vanilla extract
- 1½ tsp lemon extract
- 3 large eggs
- ⅓ cup buttermilk
- 4 cups all purpose flour
- 1 tsp baking soda
Directions
Cream together butter and honey until light and fluffy, about 3 minutes. Stir in the vanilla extract and lemon extract. Then add the eggs, one at a time. Stir in buttermilk.
Gradually add the flour and baking soda to the butter mixture. Divide the dough in half, and wrap well in plastic wrap. Refrigerate overnight.
When ready to bake, preheat the oven to 350ºF. Roll out dough on a lightly floured surface 15 minutes after removing from refrigerator. Cut the dough with a round cookie cutter, and place onto a parchment-lined baking sheet. Bake until lightly browned, about 10 to 12 minutes.
