Pumpkin Spice Cake Balls

Ingredients

Cake Balls:

  • 1/2 cup pumpkin puree
  • 1/3 cup Nature Nate’s Raw & Unfiltered Honey
  • 1 1/4 cups wheat germ
  • 1 1/4 cups finely crushed vanilla wafers (or graham crackers)
  • 1/3 cup almond butter
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt

Optional (for dipping):

  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil


Directions

Combine pumpkin puree and honey over low heat. Move to a large bowl and add wheat germ, crushed vanilla wafers, almond butter, pumpkin pie spice and salt. Mix well and scoop into round balls with a small ice cream scoop. Chill.

Then, melt chocolate chips and coconut oil just until chips lose their shape. Stir well and dip chilled cake balls in the white chocolate.

Skewer each cake ball with a craft stick to make cake pops. Refrigerate before taking the first sweet bite.
