Pink Blender Soup

Blend up a refreshing real food soup. Bright red beets give splendid color to this dish, turning it beautiful and pink. A quick and simple dish, perfect as an easy lunch, side dish or light dinner.

  • ¼ sweet onion, diced
  • 2 cloves garlic
  • 2 Tbsp Nature Nate’s Raw & Unfiltered Honey
  • 4-6 steamed beets
  • 12 ounces frozen cauliflower, thawed
  • 1 – 1 ½ cups coconut milk or kefir (to desired consistency)
  • 1 hardboiled egg, halved
  • ¼ cup scallions, diced
  • 1 teaspoon fresh dill (or ¼ teaspoon dried dill)

Place onion, garlic, honey, beets, cauliflower, yogurt and broth in a high-speed blender and puree until smooth. Salt and pepper to taste. Serve cold, or heat in a pot over medium heat until steaming. To serve, pour soup into two bowls. Place a hard-boiled egg in the center of each bowl. Sprinkle with scallions and dill. Serve and enjoy!
