Ingredients
- ¼ sweet onion, diced
- 2 cloves garlic
- 2 Tbsp Nature Nate’s Raw & Unfiltered Honey
- 4-6 steamed beets
- 12 ounces frozen cauliflower, thawed
- 1 – 1 ½ cups coconut milk or kefir (to desired consistency)
- 1 hardboiled egg, halved
- ¼ cup scallions, diced
- 1 teaspoon fresh dill (or ¼ teaspoon dried dill)
Directions
Place onion, garlic, honey, beets, cauliflower, yogurt and broth in a high-speed blender and puree until smooth. Salt and pepper to taste. Serve cold, or heat in a pot over medium heat until steaming. To serve, pour soup into two bowls. Place a hard-boiled egg in the center of each bowl. Sprinkle with scallions and dill. Serve and enjoy!
