Mini Pear Crostini

Ingredients
  • 1 large French baguette, ideally 1 day old 
  • 3 Tbsp olive oil 
  • 4 pears (peaches may be substituted)
  • 5 oz goat cheese, room temperature 
  • 4 pears (peaches may be substituted)
  • A few fresh thyme sprigs, for pear crostini 
  • ½ cup thinly sliced fresh basil, for peach crostini 
  • Salt and pepper, to taste 
  • ¼ cup Nate’s Organic 100% Pure Honey, for drizzling

Directions

Preheat oven to 350°F. 

Slice the baguette into ½-inch slices and arrange on a baking sheet. Brush or drizzle both sides with olive oil.

Place tray in center rack of oven and bake for 15 minutes or until golden and crispy. Remove from oven and set aside to cool. 

Meanwhile, core the pears (or de-pit the peaches, if using) and thinly slice. Once the toasts are slightly cool so you can touch them, turn them over and lightly spread the tops with goat cheese. Layer pear or peach slices on top.

If using pears, sprinkle with fresh thyme. If using peaches, sprinkle with sliced fresh basil. Sprinkle with salt and pepper, drizzle with honey, serve and enjoy!
