Hot Chocolate Cookies

When it comes to the cold-weather seasons and the holidays, there are two things that come to mind: hot chocolate and cookies. So we decided to combine these two goodies into one delicious sweet treat with our favorite ingredient, pure honey. Trust us, this isn’t just another chocolate cookie, and we bet it's so tasty you'll be making this treat year-round.

Ingredients
  • 3 cups flour
  • ½ cup cocoa powder
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 cup butter, room temperature
  • 1 cup Nature Nate’s pure honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup semi-sweet chocolate chips
  • 1 cup mini marshmallows

Directions

In a mixer, add the flour, cocoa powder, salt, and baking powder, and stir to combine. Add the softened butter, honey, eggs, and vanilla extract, and mix on medium high until well-combined, stopping occasionally to scrape down the sides and bottom of the mixing bowl. Fold in the chocolate chips and mini marshmallows, and stir until incorporated. Use a 1-inch ice cream scoop to scoop out the cookies onto a parchment-lined baking sheet. Press down until you have a half-inch thick disk and refrigerate for 30 minutes. Heat oven to 350 degrees, arrange cookies two inches apart, and bake for 10-12 minutes or until marshmallows begin to melt. Bake in batches or use two baking trays, as needed. Cool slightly before transferring to a cookie rack to cool completely.
