Honey Gorgonzola Puffs

Base
- 1 cup all purpose flour
- ½ cup margarine or butter, softened
- 2 Tbsp water
- 1 Tbsp fresh thyme leaves
- ¼ tsp cayenne pepper
Egg Layer
- ½ cup butter or margarine
- 1 cup water
- 1 cup all purpose flour
- 1 tsp salt
- 1 tsp onion powder
- 2 large eggs
- 16 oz Gorgonzola crumbles
Topping
- ⅓ cup Nate’s 100% Pure Honey
- Fresh thyme leaves
Directions
Preheat oven to 350°F.
Base
Combine all base ingredients until well combined. Roll into 2 balls, adding a bit more flour if needed. On a parchment lined baking sheet, pat each ball into a 12 × 3-inch rectangle.
Egg Layer
Bring the butter and water to a boil in a saucepan. Stir the flour, salt and onion powder into the hot liquid. Then, add the eggs, 1 at a time, mixing well, until smooth. Mix the Gorgonzola cheese into the egg mixture until just combined. Spoon it evenly over the base layer and bake for 50-55 minutes, until very golden and puffy. Remove from oven and cool slightly.
Topping
Drizzle honey evenly over both rectangles. Garnish with fresh thyme. Slice into “fingers” and serve.
