Honey Cream Soda

- 1 cup Nature Nate’s Raw & Unfiltered Honey
- Juice of 1 lemon
- 1/4 cup water
- 2 Tbsp pure vanilla extract (or 1 vanilla bean, pod + scraped seeds)
- 3-4 drops marshmallow extract (optional)
- Sparkling water
- Crushed ice
- Heavy cream or ice cream (if desired)
In a saucepan over medium-high heat, combine honey, lemon and water, stirring just until warmed and well combined.
Remove from heat, stir in vanilla and marshmallow extract (if using).
To serve, add 2-3 Tbsp of honey syrup to a glass, top with seltzer water.
Stir to mix, then fill glass with ice.
Top with a drizzle of heavy cream for an Italian Cream Soda.
Or nix the ice and top with vanilla ice cream for a Cream Soda Float.
