Ingredients
- 4 large yams, peeled and cut into 1/2-inch slices or 1-inch cubes
- ¼ cup of Nature Nate’s pure honey
- ¼ cup extra virgin olive oil
- 2 teaspoons ground cinnamon
- ¼ tsp ground ginger
- ½ cup toasted pecans
Directions
Preheat oven to 375. Whisk the honey, olive oil, cinnamon, and ginger and pour half of the mixture into the bottom of a baking dish. Lay the yams in a single layer on top and pour the rest of the honey mixture on top. Roast for 30 minutes.
Place the yams in a dish and add the toasted pecans to the baking dish to toss the rest of the cooking liquid with the pecans. Pour over the yams and serve.
