Directions

Steep the tea bags in the freshly boiled water for 3-5 minutes and remove. Sweeten to taste with 2-4 tablespoons honey, then place in fridge to cool.

Bring a medium pot of water to boil. Add the tapioca pearls and boil for 25 minutes, stirring occasionally to prevent sticking. After 25 minutes, turn off the heat, cover the pot, and allow the tapioca to continue cooking in the hot water for another 5-10 minutes until all the pearls are completely translucent.

Drain the tapioca pearls and rinse with cold water. Transfer to a small bowl and gently stir in 2 Tbsp honey. The honeyed pearls can be kept in a sealed container at room temperature for 1-2 days.

To serve, evenly divide the honeyed pearls among 4 tall glasses, about 2 tablespoons in each. Fill the glasses the rest of the way with ice. Pour 8 ounces tea into each glass. Drizzle 1 tablespoon cream over the top of each and add a straw to gently mix and drink.
