Honey Balsamic Glazed Caprese Chicken

This Italian-inspired dish is easily one of our favorites! Simple, everyday ingredients – like fresh mozzarella, tomatoes and basil – are elevated thanks to a honey-sweetened balsamic glaze. Ready in 20 minutes or less, enjoy straight from the pan or plate with a fresh side salad, pasta or a rustic slice of bread.

Ingredients
  • 1 cup balsamic vinegar 
  • 2 Tbsp Nate’s Organic 100% Pure Honey 
  • 2 tsp garlic, minced 
  • 4 small chicken breasts, or 2 large chicken breasts sliced in half lengthwise 
  • 2 tsp Italian seasoning 
  • 2 tsp kosher salt 
  • 1 tsp garlic powder 
  • ½ tsp black pepper 
  • 2 Tbsp olive oil 
  • 2 small tomatoes, sliced into ¼-inch slices 
  • 2 Tbsp fresh basil, chopped 
  • 8 oz fresh mozzarella, sliced into ¼-inch slices

Directions

In a small saucepan, add the balsamic vinegar and honey. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for 15-20 minutes, or until reduced by half. Stir in the minced garlic and remove from the heat. Set aside. 

Preheat the oven to 400℉. Place the chicken on a baking sheet. Mix together the Italian seasoning, salt, garlic and pepper. Sprinkle over both sides of the chicken. 

Heat the oil in a large skillet over medium-high heat. Place the chicken in the pan and cook for about 3 minutes per side, just until it starts to get golden brown. Remove from the pan and place back on the baking sheet. 

Top each chicken breast with 2 slices of tomato side by side, then chopped basil, then 2 slices of mozzarella. 

Finish cooking in the oven for 5-8 minutes, or until cooked through and the cheese has melted. Time will vary depending on the thickness of your chicken. 

Drizzle the balsamic reduction over the chicken and top with more fresh basil.
