These little toasts burst with the flavor of a Saturday morning, open-air farmers market! Sun-kissed peaches, sweet tomatoes and corn, all tied together with creamy burrata and luscious honey make such a simple and satisfying meal.

Ingredients
  • 4 oz burrata
  • 2 slices crusty French bread, toasted
  • 1 peach, sliced
  • ½ cup cherry tomatoes, halved
  • 1 cob grilled corn, kernels removed
  • 1 Tbsp olive oil
  • Salt and pepper, to taste

Directions

Divide burrata between bread slices, and top with peaches.

Toss tomatoes and corn with olive oil, salt and pepper in a small bowl.

Divide tomato mixture between bread and drizzle with honey.
