Ingredients
- 1 cup raw cashews
- 5 Medjool dates, pitted
- 2 Tbsp cashew butter
- ½ tsp sea salt
- ¼ cup Nate’s 100% Pure Honey
- 1 tsp vanilla extract
- 1 Tbsp coconut oil
- 2 Tbsp golden flaxseed
- ½ -¾ cup toasted coconut, divided
- ½ cup brown rice krispy cereal
Directions
In a food processor, pulse cashews, dates, cashew butter, sea salt, honey, vanilla extract, coconut oil, flaxseed and ¼ cup coconut together until a thick dough forms.
Add more coconut, as needed, until mixture is firm but not overly sticky.
Fold in krispy cereal, roll in coconut.
