We love this pudding for its subtle sweetness and easy customization. Add whatever toppings you’re craving, or enjoy it cold for a refreshing option. The rice thickens slowly and absorbs honey’s rich flavors, melting into a bowl that tastes like a big, comforting hug.

Ingredients
- 1 cup long grain rice
- 4 cups water
- 1 cinnamon stick
- 1 heaping tsp ground cinnamon
- 2 cups whole fat milk
- 2 – 12 oz can evaporated milk
- ½ cup Nature Nate’s pure honey
- Pinch of salt
- ½ cup raisins (optional)
Directions
Rinse the rice and drain through a sieve. Add rice, cinnamon stick, and water to a medium-sized pot set to medium high heat. Bring to a boil and cover with a lid, then reduce to low and simmer for 15 minutes.
Meanwhile, in a small saucepan, combine the evaporated milk and the honey and bring to a boil. Simmer on medium heat, stirring occasionally until the mixture has thickened and reduces by half. Strain the rice, remove the cinnamon stick, and add the rice back to the pot, along with the ground cinnamon, milk, reduced evaporated milk, and honey mixture and pinch of salt. Stir and simmer for 20 minutes. Add the raisins, if using and cook for another few minutes before serving.
