Apricot Cherry Honey Oat Bars

With these Apricot Cherry Honey Oat Bars you can make a whole batch on the weekend for easy-to-grab bars in the mornings. These are also a tasty afternoon snack or dessert. Ingredients
Oat Bar
- 1½ cups rolled oats
- 1 cup self-rising flour
- 1⅓ cups pecans, divided
- ½ cup butter
- ½ cup Nate’s 100% Pure Honey
- ½ tsp salt
Fruit Filling
- 6 oz dried apricots
- 6 oz dried cherries
- ½ cup Nate’s 100% Pure Honey
- 1 tsp lemon zest
- 1 tsp vanilla extract
- ¼ tsp salt
Directions
Preheat oven to 350°F. Process all oat bar ingredients except ⅓ cup pecans. Press ⅔ of the bar mixture into a lightly greased 8 x 8-inch pan. Bake for 10 minutes, remove from oven.
Process all fruit filling ingredients until well combined and smooth. Spoon gently and evenly over the baked oat bar crust. Spoon remaining oat bar mixture on top. Evenly distribute ⅓ cup pecans on top.
Bake an additional 20-25 minutes, until golden. Allow to cool, and cut into 16 pieces.
