Baked Cauliflower Cheese and Honey “Grits”

Try these Baked Cauliflower Cheese and Honey "Grits" for a little of that southern home-cooked charm. Processed raw cauliflower looks so much like grits (or couscous) that it will fool anyone.  It’s a great way to sneak vegetables into many dishes.

Ingredients
  • 2 cups cauliflower, minced (until it resembles couscous or coarse meal)
  • 8 oz white cheddar cheese, grated
  • 2 medium jalapeno peppers, minced
  • 3 eggs, beaten

Directions

Preheat oven to 375°F. Butter the bottom and sides of a 4-cup soufflé or casserole dish.

Whisk together all ingredients in a large bowl, and spoon into prepared casserole dish.

Bake for 40 minutes, until top is golden and cheese is bubbly.
