The moment I had butter chicken for the first time in Saint Lucia, I knew I had to recreate it with a clean spin. To put it simple, it’s an Indian dish of yogurt marinated chicken cooked in a tomato cream sauce. 🤤 I wanted it to be extra flavorful and nutrient dense, so I added in kettleandfire chicken bone broth as well. Ok enough chit chat, just make this delicious, flavor-filled recipe already! 🧡

4 chicken breasts, cut into bite-sized pieces
1 cup almond milk Greek-style yogurt (I use kitehillfoods)
1 Tbsp fresh garlic, minced
1 Tbsp fresh ginger, minced
2 tsp garam masala
1 tsp ground cumin
1 tsp turmeric
1 tsp chili powder
1 tsp sea salt

2 Tbsp ghee
1 large white onion, chopped
2 Tbsp fresh garlic, minced
1 Tbsp fresh ginger, minced
2 Tbsp garam masala
1 Tbsp ground cumin
1 Tbsp ground coriander
1 Tbsp chili powder
2 Tbsp honey (I use naturenates)
2 cinnamon sticks
1 tsp curry powder
1 tsp sea salt
1 1/4 cup chicken bone broth (I use kettleandfire), divided into 1 cup and 1/4 cup
14 oz crushed tomatoes, strained
1 cup almond milk Greek-style yogurt (I use kitehillfoods)
Cilantro, chopped, to taste

-In a bowl, combine chicken and marinade ingredients. Let marinate for 30 mins, overnight if possible.
-Heat 2 Tbsp avocado oil in large skillet over medium heat. Once hot, add chicken in 3 batches, not to crowd the pan. Cook until slightly browned, 3 mins each side. Set aside.
-Melt ghee in same pan, and sauté onions for 5 mins (scrape up browned bits from bottom).
-Add garlic and ginger, let cook for 30 sec.
-Add coriander, cumin, curry powder, and garam masala, let cook for 30 sec.
-Add crushed tomatoes, 1 cup bone broth, cinnamon sticks, chili powder, and sea salt. Turn heat to medium-low, and simmer for 15 mins.
-Remove cinnamon sticks, and pour into blender. Add 1/4 cup bone broth, and blend until smooth.
-Pour back into pan. Stir in yogurt and honey.
-Add chicken back to pan, and cook for 10 minutes.
-Top with cilantro, and serve with gluten-free naan or rice (I used rightrice).

Directions: Puree all ingredients in blender until creamy. Serve immediately.

~ 1 large baguette 
~ 16 oz whole milk ricotta 
~ Zest from one lemon 
~ 1 Tbsp fresh thyme (optional, can sub ½ tsp dried thyme)

~ 1/2 lb ripe pears (or peaches if in season) 
~ Kosher salt for sprinkling 

Directions:  Slice baguette into one-inch pieces on the diagonal. Place on a baking sheet, and bake at 325 degrees for 10 minutes or until lightly toasted and browned. Meanwhile, whip the ricotta in a blender for two to three minutes or until fluffy and smooth. Add in the lemon zest, honey, and thyme, and whip for another 30 seconds. To serve, smooth a dollop of ricotta on a slice of cooled baguette toast, and top with sliced pears or peaches. Drizzle with honey, and sprinkle with kosher salt before serving.

National Ice Cream Day is a thing, and we are here for it. 💯 Since our kitchen is loaded with summertime peaches, we decided to make one of our all-time favorite desserts, Peaches-N-Honey No Churn Ice Cream. 🍨 Trust us, it’s easier than you think. 😉 Save the recipe below and let us know your favorite take on #nationalicecreamday

~ 2 cups fresh peach slices
~ 1 cup half and half
~ 4-ounces cream cheese
~ 1/2 cup Nature Nate’s pure honey
~ 1 teaspoon vanilla
~ 1/4 teaspoon salt

Directions: Place all ingredients in a food processor. Puree until very creamy. Spoon into an 8×8-inch dish and cover. Freeze for several hours, or until stiff enough to scoop.

~ 2 cups flour
~ 1/4 tsp baking powder
~ 1/4 tsp salt
~ 1 tsp vanilla
~ 2 eggs
~ 1/4 cup Nature Nate’s pure honey
~ 1 ½ sticks unsalted butter, room temperature
~ 1/2cup butterscotch chips
~ 1/2 cup crushed salted pretzels
~ 1/4cup bittersweet chocolate chips (optional)

Directions: Heat oven to 325 degrees. In an electric mixing bowl, whip the softened butter, honey, eggs, and vanilla together. In a separate bowl combine the flour, baking powder and salt. Add the dry ingredients to the mixing bowl a third at a time until well combined. Fold in the butterscotch chips, bittersweet chocolate chips, and pretzels. Using a large ice scream scooper, scoop 8-10 cookies and place on a parchment lined baking sheet. Bake for 12 minutes, remove, and place on a cookie rack to cool. Serve and enjoy!

~ 6 strawberries, hulled and diced
~ 2 Tbsp sliced almonds
~ 1 scallion, diced
~ 2 Nature Nate’s pure honey
~ juice of 1 lime
~ 1 ripe avocado, halved and pitted
~ sea salt

Directions: In a bowl, stir together strawberries, almonds, scallions, honey and lime juice. Drizzle with honey. Spoon mixture into the center of the avocado halves. Salt lightly. Garnish with chopped basil or cilantro, if desired. Serve immediately.

We 🧡 a modern spin on a classic favorite, and these Homemade Rice Crispy Treats are an easy way to ditch the processed sugar and grab the 🍯 on your counter. Save the recipe below + let us know what other classic favorites you want us to switch up to help make snack time even sweeter.

~ 1 cup pitted dates
~ 1/2 cup Nature Nate’s pure honey
~ 1 tsp vanilla extract
~ 6 Tbsp coconut oil
~ 6 cups Rice Crispy cereal

In a food processor, combine pitted dates and honey, and puree until completely smooth. In a medium saucepan, melt the coconut oil on medium heat, then add the whipped date and honey mixture. Place the rice crispy cereal in a large, heat-proof mixing bowl. Pour the date and honey mixture over the cereal, and stir using a spatula until completely coated and combined.

Pour the mixture into a greased 9×13 baking dish. With a spatula, gently press the mixture down until it’s even and flat. Place the baking dish in the refrigerator to cool for 30 minutes. Once chilled, flip the pan over onto to a cutting board, and cut into 3 inch squares. Serve cool.

Shrimp & Sausage Skewers
~ 2 cobs corn
~ 1/2 pound extra large shrimp, peeled
~ 4 links chicken sausage (any flavor, but we used Cajun-style), cut into 1” pieces
~ 1/2 cup Nature Nate’s pure honey
~ Salt and pepper, to taste
~ 2 Tbsp fresh parsley or chives (for garnish)

Directions: With a very sharp, serrated knife, cut corn into 1” pieces. Thread corn, shrimp, and sausage onto 6” skewers. Drizzle with honey. Cook on a hot grill, turning every few minutes, until shrimp is pink and cooked through, and sausage corn are slightly charred. Garnish with fresh parsley or chives, if desired. ~ 4 cups flour
~ 1.5 sticks unsalted room temperature butter
~ 16 oz Nature Nate’s pure honey
~ 1/2 tsp baking powder
~ 1/2 tsp salt
~ 1 egg
~ 2 tsp vanilla extract

Directions: Whisk butter in a mixing bowl on medium setting for two minutes until it is pale yellow and fluffy. Add in honey, egg, and vanilla extract, and mix for another minute or until well-combined.

In a separate bowl, sift the flour, baking powder, and salt. With the mixing bowl running on low, slowly add the flour mixture, one cup at a time, stopping to scrape down the side of the bowl halfway through. Divide the mixture in half, and wrap in plastic wrap, forming into two-inch-wide circular logs. Refrigerate for at least two hours or overnight.

Preheat oven to 325 degrees. Unwrap dough and roll out into ½-inch-thick circle. Cut into desired shape, and place one inch apart on a parchment lined baking sheet. Bake for 10-12 minutes or until light gold in color. Remove from the oven, and transfer to a wire cookie rack to cool.

Peaches and Cream Shake
~ 16 oz frozen peaches
~ 1 cup low fat milk
~ 1/2 cup heavy cream
~ 1 tsp vanilla extract
~ 2 Tbsp Nature Nate’s pure honey
~ Whipped cream for topping (optional)

In a high-powered blender, combine all the ingredients, and blend on high for 1.5 minutes or on the “smoothie” setting. Pour, and top with whipped cream if using.

Move over, breakfast tacos! There’s a new savory breakfast in town, and it’s irresistible. With the perfect blend of sweet and tart, this Apple Pancetta Quesadilla is a breakfast-lovers dream. Whether you save this recipe for yourself or share it with a friend, you’ve got to put it on the menu one morning this week. Check this out… 
~ 2 large flour tortillas 
~ 1/3 cup sharp cheddar cheese 
~ 4 oz pancetta 
~ 1 cup apples (recommend Fuji), peeled and diced 
~ 1/4 cup Nature Nate’s pure honey 
Directions: In a cast iron skillet, add the pancetta, and cook on medium-low heat until crispy, about five minutes. Drain the pancetta on paper towels, and remove the fat from the pan, except for one tablespoon. Return the pan to the heat, and add the apples and honey. Sauté until the apples are softened, about five minutes. Place the filling in a bowl, and wipe down the skillet. 
Place a tortilla in the pan, and sprinkle half of the cheddar cheese evenly across the entire tortilla. Spread half of the apple filling on one-half of the tortilla. Once the cheese starts to melt, fold the tortilla in half, and cook until the edges of the tortilla begin to crisp, and the cheese is melted. Transfer to a cutting board, and cut into four equal triangles. Repeat with the other tortilla.

~ 30 pre-baked mini phyllo tart shells
~ 8-ounces cream cheese
~ 1/3 cup plain Greek yogurt
~ 1/3 cup Nature Nate’s pure honey
~ 1 teaspoon lemon zest
~ 1 pint fresh strawberries, rinsed and stems removed

Combine cream cheese, yogurt, honey, and zest until well-mixed in a food processor or blender. With a spatula, spoon mixture into a pastry bag (or other sturdy plastic bag with a small hole cut in the tip). Squeeze filling evenly into tart shells. Top with fresh berries and drizzle with honey.

We’re tossing the confetti over these Funfetti Honey Mini Bundt Cakes. 🎉 Fourth of July weekend just got a whole lot sweeter. 🇺🇸🍯 Save this post for future baking, and check out the recipe below!

For Cake:
~ 1 stick unsalted butter, softened
~ 1 cup Nature Nate’s pure honey
~ ½ cup low fat milk
~ ¼ cup heavy cream
~ 1 tsp vanilla extract
~ 4 egg whites
~ 1½ cups cake flour
~ ¼ tsp baking soda
~ 1 tsp baking powder
~ ¼ tsp kosher salt
~ 2 Tbsp sprinkles

For Icing (optional):
~ One 8oz package cream cheese, softened
~ ¼ cup Nature Nate’s pure honey
~ ½ tsp vanilla extract
~ 1 Tbsp funfetti sprinkles

With an electric mixer, cream the softened butter and honey until a pale-yellow color, about 1 minute. Add to the mixing bowl the milk, cream, vanilla extract, and egg whites, and mix until blended.

Meanwhile, in a separate mixing bowl, combine the cake flour, baking soda, baking powder, and salt, and stir to combine. Slowly add a third of the flour mixture to the electric mixer bowl. Once incorporated, repeat two more times until all the dry ingredients have been added to the wet ingredients. Scrape down the sides and bottom of the mixing bowl, and continue to mix until well-combined. Add in the sprinkles, and use a spatula to stir gently until just combined. (Over-mixing will make the colors run, so stir only until incorporated.)

Spray mini Bundt pan with vegetable spray, and scoop the filling into each Bundt pan just below the full line. Bake at 325 degrees for 20 minutes. Remove from the oven, and cool slightly before flipping each Bundt cake onto a cookie rack.

For the icing, whip the cream cheese with a mixer on high. Add the honey and vanilla extract to the mixer bowl, and beat on high for another 30 seconds. Gently fold in the sprinkles. Scoop the mixture into a piping bag and refrigerate for 20 minutes. Then pipe down the sides of the cooled Bundt cakes.

Summer ☀️ got you 🥵. Cool off with our Honey Lemonade with Berry-Mint Ice Cubes. 🍋 It’s an easy way to skip the processed sugar while keeping the sweet lemonade taste. ✅ Check this out…

· 2 cups cold water
· 1/4 cup fresh blueberries
· 1/4 cup fresh raspberries
· 1/4 cup mint, finely chopped
· 1/3 cup Nature Nate’s pure honey
· 1 1/2 cups warm water
· 1 cup (about 8-12 lemons) fresh-squeeze lemon juice

In a small bowl, mix 1 cup of cold water, blueberries, and half of the chopped mint together. Pour into an ice cube tray. Repeat with raspberries and remaining mint. Freeze until firm, about 6 hours. In a large glass bowl, whisk together the honey and warm water until the honey dissolves. Stir in the lemon juice. Place in fridge until completely cool. Serve over berry ice cubes.

Grab-and-go never looked so good with these No-Bake Peanut Butter Cookie Bites. 🤩 10 minutes and you’re in cookie heaven. 🥳 Check this out…

· 2 ½ cups old fashioned rolled oats
· 1/2 cup dried roasted peanuts
· 1 cup natural creamy peanut butter
· 2/3 cup Nature Nate’s pure honey
· 1 tsp vanilla extract
· 1/2cup mini dark chocolate chips (optional)

In a food processor, blend oats until they become a fine powder. Add in the peanuts and pulse until peanuts are chopped fine. Add the honey, peanut butter, and vanilla and pulse until the mixture becomes well-incorporated. If using chocolate chips, add and stir, using a spatula, until combined. Roll into 1 inch round balls and place in a Tupperware, storing up to 2 weeks.
