Zucchini, Chocolate & Honey Muffins

We know what you're thinking: Is this one of those recipes that sneaks veggies into a kids' snack? The answer is yes, and it tastes so good you'll be surprised it's in there too.

Oh and bonus, 1/2 cup zucchini is rich in Vitamin C.

Yield 12 muffins
Prep Time 10 minutes
Total Time 30 minutes

  • 1 1/2 cups all purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 3 large eggs
  • 1 cup Nature Nate’s pure honey
  • 1/2 cup butter, melted
  • 2 cups shredded zucchini
  • 1 cup chocolate chips

Preheat oven to 325 degrees.  Grease muffin tins to make 12 muffins.  Stir together all ingredients until there are no lumps.  Spoon into muffin cups, and fill about ¾ full. Bake for 18-20 minutes.
