Honey Brûléed Grapefruit

- 2 pink grapefruit, halved
- ½ cup Nate’s 100% Pure Honey
- ¼ tsp cinnamon
- ¼ tsp cardamom (optional)
- 1 tsp sea salt flakes
- ½ cup whole cream ricotta
- 1 Tbsp extra virgin olive oil
- ¼ tsp cayenne
- 1 Tbsp chopped pistachios (optional)
- 1 Tbsp cacao nibs (optional)
Directions
Preheat oven to broil, adjust rack to the uppermost rack in oven. Place grapefruit on a parchment-lined baking sheet. If desired, use a grapefruit knife to pre-slice each section.
Drizzle honey over the cut portion of each grapefruit. Sprinkle with cinnamon, cardamom and sea salt. Slide baking sheet into oven. Broil for 4-7 minutes, or until the honey begins to bubble and caramelize, and the edges of the grapefruit turn golden brown. Remove from oven, allow to cool slightly.
In a small bowl, mix together ricotta, olive oil and cayenne. Place a small dollop (about 2 tablespoons) on top of each warm grapefruit. Garnish with pistachios and cacao nibs, if desired. Serve warm. Enjoy!
