Honey Banana Muffins

We love tried and true recipes with honey, and none are more special than the ones passed down through generations. Somehow, they just taste better and instantly feel like home, and this one delivers just that. Courtesy of our teammate Liz and her beloved grandma Sweetie, here are some un-bee-lievable muffins that you absolutely must try.

  • 4 Tbsp unsalted butter
  • ⅓ cup Nate’s 100% Pure Honey
  • 1 cup mashed ripe banana (about 3 medium bananas)
  • 1 tsp vanilla extract
  • ¼ cup milk
  • 2 eggs
  • 1½ tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • 1½ cups flour

Preheat oven to 350°F. Spray muffin tin with cooking spray.

Soften butter in bowl until it is room temperature. Add honey, mashed banana, vanilla extract and milk to the bowl. Whisk together to combine. Add eggs and continue mixing. Sprinkle cinnamon, baking soda and salt into the bowl. Whisk until well combined.

Add the flour to the bowl and stir with a spatula until loosely combined. Be careful not to overmix.

Scoop the batter into the muffin tin. Be careful to fill about ⅔ full. Sprinkle the top of each muffin with a little cinnamon. Bake for 15-17 minutes.

Let muffins cool for 5 minutes. Eat, and enjoy!
