Peanut Butter, Banana & Chocolate Chia Pudding Parfaits

This yummy, dairy-free parfait is easy to make the night before if you don’t have much time for morning prep.  With protein from the peanut butter and natural sweetness from the honey and fruit, you’ll feel set up for the loving holiday!

Yield 2-4 servings

Prep Time 20 minutes

Total Time 60 minutes

In a blender, combine almond milk, ½-cup honey, ¼-cup peanut butter, chia seeds and ½-banana together until smooth. Pour a little more than half of the mixture into a bowl, cover and refrigerate.

Add cocoa powder to the blender, puree again until smooth. Pour into a second bowl, cover and refrigerate until thickened, at least 30 minutes.

Before serving, stir together ¼-cup honey and berries. Spoon 1/4 of the mixture into the bottom of parfait glasses. Top the fruit with a layer of peanut butter mixture, and lay slices of banana on top. Next, fill with chocolate, and add another layer of peanut butter mixture. Finally, top your parfait with berries.

Refrigerate until ready to serve, and enjoy within 8 hours of making.
