Delicious breakfast recipes for a sweet Valentine’s Day morning

If you’re like us, you’re running out the door to start your day and get your kiddos to school on time. As easy as it is to grab a breakfast on the go, we do love an occasion that forces us to slow down and enjoy breakfast around the table.

So this Valentine’s Day, get off to a great start with two delicious breakfast recipes.  With real, natural ingredients, these parfait and pancake recipes will keep you going for a day of celebration. Plus both recipes feature festive berries for a pop of pink and red to invoke the Valentine’s Day spirit!

Make these for the family (or enlist some help!), and enjoy a morning celebration together. Maybe you can even convince someone to bring these to you in bed… hint, hint.

Peanut Butter, Banana & Chocolate Chia Pudding Parfaits

This yummy, dairy-free parfait is easy to make the night before if you don’t have much time for morning prep.  With protein from the peanut butter and natural sweetness from the honey and fruit, you’ll feel set up for the loving holiday!

Yield 2-4 servings

Ingredients

  • 2 cups almond or coconut milk
  • ¾ cup Nate’s 100% Pure Honey, divided
  • ¼ cup natural peanut butter
  • ½ cup chia seeds
  • 1 ripe banana, divided
  • 2 Tbsp cocoa powder
  • 1½ cups strawberries, raspberries, blackberries and/or blueberries

Directions

In a blender, combine almond milk, ½ cup honey, peanut butter, chia seeds and ½ banana together until smooth. Pour a little more than half of the mixture into a bowl, cover and refrigerate.

Add cocoa powder to the blender, puree again until smooth. Pour into a second bowl, cover and refrigerate until thickened, at least 30 minutes.

Before serving, stir together ¼ cup honey and berries. Spoon a layer of the berry mixture into the bottom of parfait glasses. Top the fruit with a layer of the peanut butter mixture, and lay slices of banana on top. Next, add a layer of the chocolate mixture and top with another layer of the peanut butter mixture. Finally, top your parfaits with the remaining berry mixture.

Refrigerate until ready to serve, and enjoy within 8 hours of making.

Paleo Pancakes

In a blender, puree the pancake ingredients. Cook pancakes in a skillet over medium heat, using coconut oil to keep the pan well greased. Mix together fruit, tossing in honey until well coated, and top off your pancakes with this fruit medley.
