Honey & Ricotta Toast

- 1 large baguette
- 16 oz whole milk ricotta
- Zest from 1 lemon
- ¼ cup Nate’s 100% Pure Honey, plus more for drizzling
- 1 Tbsp fresh thyme (optional, can sub ½ tsp dried thyme)
- ½ lb ripe pears (or peaches if in season)
- Kosher salt for sprinkling
Slice baguette into 1-inch pieces on the diagonal. Place on a baking sheet, and bake at 325°F for 10 minutes or until lightly toasted and browned. Meanwhile, whip the ricotta in a blender for 2-3 minutes or until fluffy and smooth. Add in the lemon zest, honey and thyme, and whip for another 30 seconds.
To serve, smooth a dollop of ricotta on a slice of cooled baguette toast and top with sliced pears or peaches. Drizzle with honey and sprinkle with kosher salt before serving.
