These Caramelized Peaches, Crispy Pancetta, & Thyme Pancake Tacos are a cozy and festive breakfast to make as we head into the Fall season! 🍂🍯🥞🥓🍑

SINGLE SERVING RECIPE

INGREDIENTS
Blender Pancakes:
- 1/2 cup Rolled Oats
- 1/2 Banana
- 1 Egg
- 1/2 tsp. Baking Powder
- 1-2 tbsp. Water, to thin out to desired preference

Caramelized Peaches:
- 1/2 Peach, thinly sliced
- 1 tsp Brown Sugar or Honey
- 1/2 tsp Fresh Thyme Leaves

Other Toppings:
- Whipped Cream
- Vanilla Yogurt
- Crispy Pancetta, crumbled
- Honey

INSTRUCTIONS
For the Caramelized Peaches:
1. Add all ingredients to a nonstick pan over medium high heat.
2. Stir consistently for 2-3 minutes, then add 2 tbsp water and cover to simmer for 5-6 minutes (or until tender).

For the Pancakes:
1. Blend until smooth. Using 1/3 cup batter per pancake, cook on a griddle over medium high heat until lightly browned on both sides.
2. Fold pancakes like a taco while warm.
3. Add vanilla yogurt or whipped cream, the caramelized peaches, crumbled pancetta, and a drizzle of honey. Enjoy!

If you love Buffalo sauce as much as I do then these buffalo Brussels sprouts will rock your world! This spicy twist on a classic side is so darn good you will not be able to stop eating them. I speak from experience on this one! And if you don’t have an air fryer you can roast these in the oven and they will be just as good. Now stop reading and go make these!

Air Fryer Buffalo Brussels Sprouts 🔥
1 lb Brussels sprouts, halved and trimmed
1.5 Tbsp olive oil
Pinch of salt
1/3 C buffalo wing sauce (I used Franks)
1 Tbsp honey
1/2 Tsp garlic powder
Crumbled blue cheese, for garnish

In a large bowl Combine brussels sprouts with olive oil and salt. Toss to coat. Add brussels sprouts to air fryer and cook at 380 degrees F for 5 minutes. Toss and cook another 5-6 minutes. Toss brussels sprouts with buffalo sauce garlic powder and honey. Return to air fryer and cook at 400 degrees for 2-3 minutes. Serve with bleu cheese and a drizzle of buffalo sauce on top. Enjoy!

This is the perfect appetizer to take to your dinner parties, BBQs, or serve for your friends and family (or yourself…no shame). Roasted olive lemon feta dip 🍋🫒🫶 I can’t even describe to you this taste sensation. You have to try this ASAP. I am warning you, you will not have any leftovers.

•ROASTED OLIVES & GARLIC•
- 1/2 cup mix of whole kalamata and castelvetrano olives, sliced in half long ways eatdivina
- 6-7 cloves of garlic, sliced in half long ways
- Good quality olive oil, enough to cover olives at least halfway kosterina
- 1/4 tsp thyme
- 1/4 tsp Italian seasoning
- 1/4 tsp red pepper flakes
- Salt and pepper to taste

•WHIPPED FETA•
- 16 oz block of feta, diced
- Drizzle of good honey naturenates
- Juice and zest of 1 lemon
- Splash of milk or half and half
- 1/4 cup olive oil
- Salt and pepper to taste
- Gluten free crackers (miltonscraftbakers I love you so much please sponsor me 🤍)

1. Put sliced olives, garlic, olive oil, and spices in an oven safe dish.
2. Roast at 350 for 20-25 minutes, until brown and crispy.
3. While olives are roasting, add remaining ingredients into a food processor.
4. Once blended, transfer to serving platter and top with the olives and garlic. I like to drizzle the herbed olive oil over top for added flavor.
5. Serve with gluten free crackers or vegetables of choice 🙂

🥥Cold brew. You can also use espresso or chilled brewed coffee.
🥥Toasted coconut milk. Make your own! Or use store-bought coconut milk.
🥥Coconut whipped cream. For a nice smoothness after every sip, I like to top with coconut whipped cream. Make your own or use a store-bought version like So Delicious Dairy-Free.
🥥Raw honey. This is the highlight of the entire drink and also acts as a great sweetener and is rich in antioxidants.

Tis the season for pumpkin spice. This is my super simple all natural version of the oh so popular drink. I used naturenates honey instead of sugar because it adds just the right amount of natural sweetness. Perfect for an afternoon pick me up.🍂

🧡Pumpkin Spice Coldbrew🧡

-1/4 cup of half and half or milk
-2 heaping Tbs of pumpkin purée
-1/2 tsp of cinnamon
-1/2 tsp of all spice
-1 Tbs honey
-1/2 tsp of vanilla
-1 1/2 cups of cold brew coffee
** Milk frother **

Combined cream, pumpkin, spices and vanilla in a glass and mix with milk frother until foamy. Then add your desired amount of honey and continue frothing for a few seconds. Pour your cold brew into a separate glass (add ice if desired) and then pour the pumpkin spiced cream over top. Enjoy!

⚠️Saturday 10/1/2022 Erwin Park MTB trails will be completely CLOSED to all Mountain Bike Traffic to allow for a safe and great experience for the trail runners on the first annual The Great Root Movement Love Never Ends trail run! However, the entire Skills Area (Hub and Jumps) will be open to MTB, and we may also have one or more bike skills training clinics scheduled TBD. The MTB community will have plenty of options to keep busy. Erwin Park trail crew will be present to monitor the MTB traffic and we will also schedule some trail work during the day for the MTB community to help with in case anyone who would otherwise be riding wants to come contribute to our work while the trail is closed. Mark your calendars, again no MTB will be allowed on the trails this day. The trial signs and online status will be closed, and barricades will be installed to prevent bike traffic.⚠️

⚒Saturday 9/24/2022 in preperation for the race, we are also scheduling a trail work day to show our support and make sure the trails are groomed and ready for the runners. We are asking for volunteers from both the MTB community and running community to attend. The goal will be to trim and mow any tall grass that is close to the trail as well as resolve and close down any potential rogue lines and cut throughs that have been left unattended, as well as trimming back any low branches or sharp broken limbs that pose a threat to bikes and runners. This work will be beneficial for everyone and collaboration will help us get it done in a timely manner. If anyone can bring there own trimmers or other tools we would encourage it but we will have tools available. We can reimburse for necessary consumables such as fuel, weed trimmer string, etc. Mark you calendars and share the info please!⚒

They don’t want us to know that we can heal ourselves ✨

This is a very typical breakfast for me most days that includes:

-organic grass-fed beef
- grass-fed feta cheese
- pasture raised organic eggs
- grass-fed butter
- organic strawberries
-full fat plain yogurt
-organic raw honey
-grass-fed whole milk
-organic coffee espresso
- Celtic salt to taste 👅

It’s taken a lot of time, reading and patience to finally find a lifestyle of eating that helps me flourish. You don’t need to count calories, you don’t need to eat processed food that’s marketed as “health” food and you certainly don’t ever have to feel hungry all the time. If you eat what nature intended you to eat you will THRIVE.
I get a lot of questions from friends and fam and coworkers about what I’m eating but I find it easier to simplify it. Minimizing all processed foods is the number one thing I find most important! We’ve been told to eat fat free and avoid meat- and i was SO guilty of getting sucked into that narrative, but I started noticing health issues that came with that way of thinking. Eating like our ancestors makes so much sense to me now! Full fat foods that satiate you and don’t leave you hungry an hour later, quality meat, and organic fruits as much as I can are my main food groups now. With the occasional treats as well because that also makes us human!

Big pharma is creating food guidelines, food like products and selling us BS lies about our health for profit. Healthy populations means they make less money. The standard American diet is making us sicker than we have ever been before and this western way of eating is spreading to other countries that are now seeing the very same health trends. Chronic disease effects a majority of the population and a majority of this is caused by lifestyle. We do not have to live this way. Big pharma gives us a pill for every ailment, but they rarely if ever look for the root causes. Nature intended for us to thrive and I’m determined to change the narrative.

Sweet and savory grilled chicken with broccoli and bok choy 🥦

•cook your chicken in olive oil and 1 tablespoon of dairy free butter on low on the stove in a nonstick pan
•add black pepper,salt, onion salt, and minced garlic
•add sauce made up of organic honey, cocoa aminos, rice vinegar, and brown sugar (I didn’t measure anything so just measure with your heart 😉❤️)
•cook on low-medium for about 8 mins

•sauté organic broccoli and bok choy in a pan with olive oil on low (separate pan)
•once the chicken is done add the veggies to make one dish
•cook until veggies are done

•add to gluten free jasmine rice: add 1 tbsp dairy free butter for flavor and 1 tsp of ginger

•top with warm honey and sesame seeds
