Sweet Potato Marinara

With lots of vegetables, this marinara recipe creates a well-balanced pasta dish with tons of flavor for you and your family.

Ingredients
  • 2 pints cherry tomatoes
  • 1 medium onion, roughly chopped
  • 1 medium sweet potato, cut into 1-inch cubes
  • ½ Granny Smith apple, roughly chopped
  • 1 Tbsp chopped garlic
  • ⅛ tsp red pepper flakes
  • 2 tsp kosher salt
  • ¼ tsp black pepper
  • 2-3 Tbsp Nate’s 100% Pure Honey
  • ⅓ cup olive oil
  • 8 oz baby bella mushrooms, roughly chopped
  • 1-1½ cups hot water
  • ½ cup fresh basil, sliced thinly

Directions

Preheat oven to 375 °F. Place all ingredients except basil in a large roasting pan and toss together well to coat vegetables evenly.

Roast for 1 hour, stirring several times to prevent burning. When vegetables are roasted and soft, place in a food processor with 1-1½ cups hot water. Add basil and serve. Makes about 5 cups.
