for Cinnamon Honey Syrup
- 1 ½ Tbsp honey
- 2 Tbsp water
- 1 tsp vanilla extract
- 1 cinnamon stick
- 1 cup brewed espresso, cooled
- 2 cups ice
- 1 portion of cinnamon honey syrup (see above)
- ½ cup half-and-half
- Whipped cream for topping (optional)
To make the cinnamon honey syrup, combine honey, water, vanilla extract, and cinnamon stick in a small saucepan, and bring to a simmer for 3-5 minutes or until the mixture begins to just thicken. Remove from heat, and allow to cool. In a blender, add ice and pour over espresso, cooled honey syrup, and half-and-half. Blend on high until frothy and combined. Pour into a glass, and top with whipped cream if using.
