  • ½ eggplant, cut into large chunks
  • ½ purple cauliflower, cut into large florets
  • 4 kumato tomatoes, halved
  • 1 small purple onion, cut into large chunks
  • ½ small purple cabbage, cut into large chunks
  • 1 large purple carrot, halved and cut into pieces
  • ⅓ cup Nate’s 100% Pure Honey
  • 2 Tbsp olive oil
  • 1 Tbsp horseradish (or 2 cloves garlic, chopped)
  • 1 lemon, juiced and zested
  • Salt and pepper

Preheat grill to medium heat. Thread skewers with veggies. In a small bowl, stir together honey, olive oil, horseradish and lemon juice and zest.
