Purple Veggie Grilled Skewers

- 1/2 eggplant, cut into large chunks
- 1/2 purple cauliflower, cut into large florets
- 4 kumato tomatoes, halved
- 1 small purple onion, cut into large chunks
- 1/2 small purple cabbage, cut into large chunks
- 1 large purple carrot, halved and cut into pieces
- 1/3 cup Nature Nate’s Raw & Unfiltered Honey
- 2 Tbsp olive oil
- 1 Tbsp horseradish (or 2 cloves garlic, chopped)
- 1 lemon, juiced and zested
- Salt and pepper
Preheat grill to medium heat.
Thread skewers with veggies.
In a small bowl, stir together honey, olive oil, horseradish and lemon.
Grill skewers, basting with honey marinade until veggies are crisp-tender.
