  • ½ cup coconut oil, melted
  • 1 cup 100% pure pumpkin
  • ⅔ cup Nate’s Organic 100% Pure Honey
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups flour
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1½ cups semi-sweet chocolate chips

Preheat the oven to 350°F. Line a cookie sheet with parchment paper and set aside.

In a medium-sized bowl, whisk together the coconut oil, pumpkin, honey, egg and vanilla extract. In a separate bowl whisk together the flour, cinnamon, baking powder, baking soda and salt. Add to pumpkin mixture and stir just until mixed. Do not overmix. Fold in the chocolate chips.

Using a 1½-inch cookie scoop, scoop cookies onto your prepared baking sheet. Bake for 9 – 11 minutes, or until soft and the cookie slowly bounces back when touched.
