Peanut Butter Yogurt Bites

- 3 Tbsp Nate’s Pure Honey
- 1 cup Greek yogurt (or thick coconut yogurt)
- 6 Tbsp smooth peanut butter
- 2 Tbsp mini chocolate chips
- 1 tsp vanilla
- 1½ cups chocolate chips
- 1 Tbsp coconut oil
- ¼ cup chopped peanuts
Directions
Line a baking tray with parchment paper. Combine together honey, yogurt, peanut butter, mini chocolate chips and vanilla and stir until smooth. Dollop mixture onto the tray using a cookie scoop or a spoon. Place in freezer until hardened (about two hours).
In a separate bowl, melt together the chocolate chips and coconut oil in the microwave in 15-second increments, stirring between each increment, until smooth and glossy.
Remove yogurt bites from the freezer. Working quickly, drop the yogurt bites one at a time into the melted chocolate. With a fork, turn to coat. With the bite sitting on the fork, lightly shake off the excess chocolate and place back on the parchment-lined baking tray.
Quickly, before chocolate hardens, sprinkle with chopped peanuts, or leave as is. Continue with the rest of the yogurt bites. Store in a container in the freezer. You can enjoy straight from the freezer or take out for a few minutes to slightly soften.
