Peanut Butter, Banana & Chocolate Chia Pudding Parfaits

A delicious, dairy-free chocolate, peanut butter and banana blender pudding. Sweetened with golden honey and paired with a whole host of different berries, this delicious recipe is perfect for dessert and makes a delicious breakfast, too.

  • 2 cups almond or coconut milk
  • ¾ cup Nate’s 100% Pure Honey, divided
  • ¼ cup natural peanut butter
  • ½ cup chia seeds
  • 1 ripe banana, divided
  • 2 Tbsp cocoa powder
  • 1½ cups strawberries, raspberries, blackberries, and/or blueberries
  • Additional berries for garnish

In a blender, combine almond milk, ½ cup honey, peanut butter, chia seeds and ½ banana together until smooth. Pour a little more than half of mixture into a bowl, then cover and refrigerate.

Add cocoa powder to blender, puree again until smooth. Pour into a second bowl, then cover and refrigerate until thickened, at least 30 minutes.

Before serving, stir together ¼ cup honey and berries. Spoon ¼ of honey and berry mixture into the bottom of each parfait glass. Top with a layer of peanut butter mixture (using half of the peanut butter mixture), set slices of banana on top, then top with the chocolate mixture. Place another layer of peanut butter mixture on top, and garnish with additional berries.

Refrigerate until ready to serve. Enjoy within 8 hours.
