Pure, raw & unfiltered honey and dates add that indulgently sweet taste but have a low glycemic index so you won’t experience the same crash as with processed sugar. Make a batch of these at the beginning of the week, and no one will be reaching for the pre-packaged pantry snacks.

Ingredients
- 1½ cups rolled oats
- ¼ cup Nate’s 100% Pure Honey
- ½ tsp salt
- 1 tsp vanilla extract
- ¼ cup peanut or almond butter
- 8 oz medjool pitted dates
- 1 cup peanuts or toasted almonds, coarsely chopped
- ¼ cup chocolate chips
Directions
Preheat oven to 350°F. On a cookie sheet, toast oats for 10 minutes (if desired). Warm the honey, salt, vanilla extract and nut butter together in the microwave until very warm. Mix well and spoon into food processor. Add dates one at a time until mixture is smooth. Blade will slow as dates are added, result is a very thick mixture.
Spoon date mixture into a bowl and add the oats, nuts and chocolate chips. Press evenly into a parchment-lined 8 x 5-inch loaf pan. Chill for several hours. Slice into 16 bars.
