Ingredients
- 2½ cups old fashioned rolled oats
- ½ cup dried, roasted peanuts
- ⅔ cup Nate’s Organic 100% Pure Honey
- 1 cup natural creamy peanut butter
- 1 tsp vanilla extract
- ½ cup mini dark chocolate chips (optional)
Directions
In a food processor, blend oats until they become a fine powder. Add in the peanuts and pulse until peanuts are chopped fine. Add the honey, peanut butter and vanilla extract, and pulse until the mixture becomes well-incorporated.
If using chocolate chips, add and stir, using a spatula, until combined. Roll into 1-inch round balls and store up to 2 weeks.
