Ingredients
For the Salad
- 5-6 cups watermelon, cubed (from 1 large mini watermelon)
- 1 cup cucumber, sliced into half-moons
- ½ cup fresh blueberries
- ½ cup feta cheese, crumbled
For the Dressing
- 2 Tbsp Nate’s Hot Honey
- 1 Tbsp olive oil
- 1 tsp lime zest (zest from 1 lime)
- 2 Tbsp fresh lime juice (about 1 lime)
- 1 Tbsp finely sliced fresh mint
- Pinch of salt
For Garnish
- Small fresh mint leaves
Directions
To make the dressing, whisk together hot honey, olive oil, lime zest, lime juice, chopped mint and a pinch of salt in a small bowl. Set aside.
Assemble the salad by gently combining the watermelon, cucumber, blueberries and crumbled feta in a large bowl or platter. Cover and place in the fridge until ready to serve.
Just before serving, drizzle the dressing over the salad. Toss gently to combine, and top with some fresh mint leaves. Serve immediately and enjoy!
