Honey Rainbow Carrot Salad

With a hint of mint and a kick of Sriacha sauce, this twist on a classic salad is full of color and flavor! Serve the salad as a side or enjoy it solo as a healthy snack.

  • 2 pounds multi-colored carrots, peeled, trimmed and sliced very thinly
  • 1/2 cup mint, chopped
  • 1/3 cup Nature Nate’s Raw & Unfiltered Honey
  • 1/4 cup olive oil
  • 1/4 cup cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon Sriracha sauce


Lightly steam carrots until they are slightly tender. Cool completely. Whisk together all remaining ingredients until well combined. Toss honey mixture with carrots. Chill until ready to serve.
