Honey, Fig & Mascarpone Flatbread
This may be a flatbread, but thanks to Roni Proter from Dinner Reinvented the flavors of this dish will not fall flat. Easy to make, yet stunning to look at, we can enjoy this recipe by ourselves or with company.

Ingredients
- 8 oz mascarpone cheese
- 1 large flatbread, pre-baked and cooled
- 8 ripe figs, cut in ¼-inch thick slices
- 4 oz plain goat cheese
- Small handful fresh thyme
- Pinch of kosher salt
- ½ cup Nate’s Organic 100% Pure Honey
- Arugula (optional)
Directions
Preheat the oven to 450°F. Spread the mascarpone cheese evenly on the flatbread crust. Place slices of figs evenly on the flatbread, crumble the goat cheese and evenly sprinkle on top. De-stem thyme and sprinkle the leaves and salt evenly on top. Drizzle with honey and bake for 5-10 minutes or until cheese begins to bubble.
Cool slightly before slicing into wedges and top with any remaining honey and fresh thyme. Top with arugula, if using.
