Egg Bites with Honey Bacon

Ingredients
  • 5 slices of bacon 
  • Nate’s 100% Pure Honey, for drizzling 
  • 8 eggs 
  • 1 Tbsp heavy cream 
  • ½ tsp salt 
  • ¼ tsp black pepper 
  • ⅓ cup shredded cheese 
  • ¼ cup baby spinach, chopped

Directions

Preheat your oven to 400℉. Spray a muffin pan with cooking spray. Set aside.

Place your bacon on a baking sheet (either not lined or lined with foil). Drizzle with a hearty drizzle of honey on each slice. 

Bake for 10-15 minutes, until bacon is crispy to your liking. Remove the bacon from the pan and let cool on a plate lined with paper towel to drain the grease. Chop into bite sized pieces once cooled completely. 

In a medium bowl, whisk together your eggs, cream, salt, and pepper. 

Stir in your shredded cheese, chopped spinach, and chopped bacon. 

Pour the egg mixture into the prepared muffin pan, filling halfway full. 

Bake for 13-15 minutes, or until cooked through with no runny spots. 

Remove from the pan and enjoy. Store in an airtight container for up to a week in the fridge.
