Coconut Honey Granola

This delicious and nutritious granola is simply the best! Made with shredded coconut, oats, chia and flax seeds, and pure honey, and then toasted until golden brown, this homemade granola tastes delicious added to yogurt, paired with fresh fruit or as a crunchy muffin topping.

Ingredients
  • 3 cups oats
  • ½ cup unsweetened shredded coconut
  • ¼ cup chia seeds
  • ¼ cup flax seeds
  • 1 tsp salt
  • 2 tsp cinnamon
  • ¼ cup coconut oil, melted
  • ½ cup Nate’s 100% pure honey
  • 2 tsp vanilla

Directions

Preheat the oven to 325℉. 2.

In a large bowl, combine the oats, coconut, chia seeds, flax seeds, salt, and cinnamon. 3.

In a small bowl, whisk together the coconut oil, honey, and vanilla, 4.

Combine the honey mixture with the oat mixture, then spread evenly on a baking sheet. 5.

Bake for 20 minutes, then turn the pan around in the oven so that it cooks evenly. Don’t stir the oats, as it will prevent crispy clumps from forming. Bake for another 10 minutes, or until lightly golden brown. 6.

Let cool completely, then gently break up the granola and place in an airtight container. 7. Store at room temperature for up to 2 weeks, or in the freezer for up to 6 months.
