Chocolate Honey-Cherry Cordials

- 1 cup grain-sweetened chocolate chips
- 12 black maraschino cherries (we used Luxardo)
- 3 Tbsp Nate’s 100% Pure Honey
- 1 Tbsp naturally colored rainbow sprinkles
In a microwave-safe bowl, melt chocolate chips in 30-second bursts, stirring between, until smooth. Spoon a small amount of melted chocolate into the bottom of a mini muffin tin that has been lined with mini parchment cups.
Stir together cherries and honey. Spoon a cherry and small amount of honey into the center of each cup. Cover with chocolate.
Add sprinkles, if desired. Refrigerate until ready to serve.
