Ingredients
- ½ cup cashew butter
- 1 cup cashews, toasted and roughly chopped
- ½ cup Nate’s 100% Pure Honey
- 1 cup dried apricots, well chopped
- ½ cup dates, well chopped
- ½ cup flaxseed meal
- ½ cup oat bran
- 1 cup old fashioned oats
- ½ tsp salt
- ½ tsp vanilla extract
- ⅓ cup flaked coconut, lightly toasted
Directions
Combine all ingredients except coconut and roll into 16-18 balls. Roll each ball in coconut to coat, then place in miniature cupcake liners.
