Cashew Butter and Apricot Energy Bites

Kickstart your morning routine with these cashew butter and apricot energy bites. Get the boost you need with flaxseed meal, apricots, oat bran, and cashews with a hint of coconut. It'll be hard to have only one bite, so pack a few to snack on throughout the day.

Ingredients
  • 1/2 cup cashew butter
  • 1 cup cashews, toasted and roughly chopped
  • 1/2 cup Nature Nate’s Raw & Unfiltered Honey
  • 1 cup dried apricots, well chopped
  • 1/2 cup dates, well chopped
  • 1/2 cup flaxseed meal
  • 1/2 cup oat bran
  • 1 cup old fashioned oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/3 cup flaked coconut, lightly toasted

Directions

Combine all but coconut and roll into 16-18 balls. Roll each bite in coconut to coat. Then place in miniature cupcake liners.
