Blueberry Protein Breakfast Bowl

- ½ sweet potato, peeled
- 1 Tbsp coconut oil
- 1 clove garlic, finely chopped
- 2 chicken sausages, sliced
- ¼ cup Nate’s 100% Pure Honey
- 1 cup blueberries
- Salt and pepper
Microwave or bake sweet potato until tender. Cool slightly and cut into cubes or wedges.
In a small skillet, melt coconut oil over medium heat, toss in garlic, cook for 30 seconds, then add sweet potato and sausage. Cook until sausage is golden brown.
Transfer to serving bowls, top with blueberries. Drizzle with honey. Salt and pepper to taste.
