Directions
Donuts
Heat oven to 350°F. In a blender, combine the egg, buttermilk, applesauce, cinnamon and honey, and pulse until well mixed. Add the flour, baking powder and baking soda, and blend on low until completely mixed, pausing to scrape down the blender.
Coat the donut baking pan very well with vegetable spray, then pour the donut mixture into the mold. Wipe clear the center where the hole is, and bake for 20 minutes.
Bacon Honey-Glaze
Meanwhile, make the Bacon Honey Glaze. Bake or fry the bacon until crispy, and drain off fat. Chop fine. In a medium saucepan, simmer the honey on medium heat for 5 minutes.
When the donuts are baked, use a wooden spoon or chopstick to gently pull the donuts out of the mold. Very carefully dip the donuts in the warm honey, place on a wire cookie rack and sprinkle with chopped bacon. Repeat with the remaining donuts, and allow to cool slightly before serving.
Helpful hint: Place parchment paper under the cookie rack to make clean up easier.
